Whip these up on a Friday night and they're gone by Monday morning. Basic muffins are really easy to make and way better than dry mixes at the grocery store.
1 and 1/2 cups flour
2 Tsp baking powder
1/4 tsp salt 3/4 cup sugar
1/3 cup oil
1 Tsp vanilla
1/2 cup evaporated milk (Yes, this is the secret ingredient)
1 cup fruit of your choice, finely chopped.
Mix flour, baking powder and salt in bowl and set aside. In a large bowl, combine Sugar, oil and vanilla. Add eggs and blend well. Add about half of the flour mixture and mix well. Next, add your fruit and evaporated milk and then blend in remaining flour mixture. Grease or use cooking spray on 12 muffin cups, dividing the batter evenly. Bake at 350 for 25 to 30 minutes. Inserted tooth pick in center should come out clean.
