Aimee's Atmosphere

  • Wednesday?

    Posted by Aimee

Then Morpheus, I would be delighted!!

This is the first week in numerous weeks, I haven't woken up on Wednesday thinking it was a different day.  Wednesday is a great day, not sure why I have been trying to forget it.

However, I did go through Tuesday thinking it was Friday...what a bummer!
I really hate when I think it's later in the week then it is.  You?

  • Here comes the bread tags?

Of course, on your wedding day you want to be comfortable, unforgettable, but mostly-unique and true to yourself!

My dress was "typical" by this bride's standards-her dress was made out of bread tags!

She didn't know it at the time of the wedding, but she had a bun in the oven!
I think if it's a little girl, Nadine HAS to be the name--read the story here to find out why

  • Where is that smell coming from?

    Posted by Aimee

Oh the joys of motherhood-never really knowing what that smell is.  And then spending forever trying to find it.  And of course, you check your child every other minute because logically that's what makes the most sense!
The worst part is, sometimes you never find the cause of the smell-it just disappears!

I don't always find these funny, amusing or even relevant-but this one?  Its' pretty dead on!

But at least now, I have a clean house!!

  • Birthday fun!

  • Warm up with some soup

    Posted by Aimee

As I have admitted, Pintrest is an addiction of mine and we are benefiting from it.  Gone are the days of the same 7 or so things for dinners and breakfasts.  Since it's soo cold out, I thought I would share one of my new favorite soups to make: Olive Garden's Chicken Gnocchi Soup!

It's delicious and pretty easy to make!

    What you will need:
1 cup of diced and cooked chicken.  (I just cooked up a couple of chicken breasts and threw them in, I didn't mind the soupy being meaty)
    4 Tbsp of butter
    4 Tbsp of olive oil
    1 quart  half and half
1 14 ounce can of chicken broth
1/2 cup of celery (we didn't have any celery so I omitted this from ours)
    1/4 cup flour
2 garlic cloves, minced (I cheated here too, get the stuff already ready in a jar)
1 cup of carrots, shredded (I didn't shred these, I just cut them into thin pieces)
1 medium onion, diced (I admittedly used too big of an onion for this and it was quite oniony)
1 cup of fresh spinach (don't leave this out, yes it isn't much for flavor and just adds color, but it was my favorite part of the soup)
1/2 tsp of thyme (I left this out as I don't like thyme)
salt and pepper to taste (I ended up using quite a bit of pepper)
16 ounce package of gnocchi (you can find this in your grocer's noodle aisle)

In a large stockpot, sauté the onion, celery and garlic in the butter and olive oil.  When you have sautéed the onion until it's clear add the flour and form a roux.  Stir and cook a minute.  Add the half and half.  Meanwhile, in another pan, cook the gnocchi.  Add the carrots and chicken to the stockpot.  Stir often and when it gets thicker add the chicken broth, gnocchi, spinach and seasonings.  Cover and heat through.

This is a picture of my soup-yum yum yum!
